Buffalo Mozzarella with Pomegranate Seeds

For a light starter with a twist this recipe for buffalo mozzarella and pomegranate seeds courtesy of Bukowski Grill. Known for their love of meat and all things burgers this recipe is a refreshing change from their usual. If you're after a light starter before a heavy main then this dish is for you.

This day is purely dedicated to men making the dinner for their friends or partners, so it's time to put your apron on, cook up a storm in the kitchen and get your creative hats on because you'll want to cook to impress!

Men Make Dinner Day was started by Sandy Sharkey and she's been pushing men off of the sofa and into the kitchen to their partners' cries of joy. So lads, put down the beer and the remote and pick up a whisk, you never know, you may even like it!

Buffalo Mozzarella with Pomegranates, Chilli, Mint and Parsley (V)

This is the perfect starter for those of you who aren’t prepared to cook a whole lot. With a few ingredients you can make something very simple, but is packed full of flavour that is surely not to disappoint.

INGREDIENTS

  • 2 Buffalo mozzarella torn into 8
  • 100g pomegranate seeds
  • Small bunch of flat leaf parsley roughly chopped
  • Small bunch of mint roughly chopped
  • 1 red chilli deseeded and finely chopped
  • 2 tbls Extra virgin olive oil
  • Salt and cracked black pepper

METHOD

Arrange the mozzarella on a serving plate.

In a small bowl, mix the pomegranates with the parsley, mint, chilli and olive oil.

Drizzle all over the mozzarella, season and serve.
