Awarded ‘Best Vegan Menu’ at the PETA UK Vegan Food Awards in 2015, RAW offers fun mocktails and an amazing array of tasty dishes, with its vegan afternoon tea, à la carte and five-course tasting menu, that all consist of vegan friendly and raw cuisine.

Head chef Nik Heartland certainly knows how to excite his guests with his 100% vegetarian creations, and the brand new summer menu is no exception, showcasing a selection of guilt-free dishes that will not disappoint your taste buds. The new menu features delicious soups and small plates with freshly made pitta bread, mushroom pate and beetroot and feta salad, and large plates that include all the goods, like gnocchi, aubergine rollatini and courgette ragout. And don't worry about dessert, RAW has you covered, offering guilt-free of course, but still devilishly, decadent choices like raw tiramisu, lemon meringue and cheesecake.

Peppered Tofu

  • 2 Blocks Firm Pressed Tofu
  • 2 Cups Water
  • 1 Cup Light Brown Sugar
  • 1/2 Cup Sea Salt
  • 3 tbsp. Black Peppercorns
  • 4 tsps. Dry Juniper Berries
  • 3 tbsp. Pink Peppercorns
  • 2 Bay Leaves
  • 3 tbsp. Cumin Seeds
  • 2 tsps. Ground Cloves
  • 5 Cloves of Smashed Garlic

Method

  1. Add all the ingredients into deep pot and bring to a boil.
  2. Remove from heat and leave to cool.
  3. Place the blocks of tofu and submerge in the liquid for 30 minutes.
  4. Remove and dry.

* The liquid may be used again. To reheat the tofu, place on baking paper and into the oven until golden brown.
